What makes coffee bitter?

A. Coffee is a complex chemical soup, and many of its chemicals, including some that produce astringency rather than bitterness, and even some acids, have been implicated in the perception of bitterness.

Bitterness also depends on variables including the coffee variety; how it is processed and roasted; the brewing method, temperature and time; and even the chemical content of the water.

Starbucks is switching from whole milk to 2% milk for espresso drinks in all of its U.S. and Canadian stores by the end of the year. For those who still enjoy the whole milk, don’t worry, it’s still available.

 The two milestones come hot on the heels of the opening of the company’s newest outlet at Deira City Centre; the 41st in the UAE and the 7,200th in the worldwide Dunkin’ Donuts chain.

Dunkin’ Donuts General Manager, Mr. David Rodgers, believes that the twin achievements confirm the success of the brand across the UAE; a brand that has become synonymous with high quality coffee and baked goods and sells a range of pastries, donuts and beverages; which include; coolattas, iced lattes and fruit smoothies. ‘Ever since we opened our first restaurant in Dubai in May 1997, we have enjoyed huge success throughout the emirates,’ he says. ‘We’ve found that customers in this part of the world are very discerning and insist on premium quality. All our coffee comes from selected beans, which has meant that we have a justifiable reputation for brewing the highest grade gourmet coffee,’ he adds.
